Bacon and egg bites

I made a couple of these as an experiment on Thursday. I got the idea from one of those ‘useful life hacks’ meme lists that keep cropping up on facebook. It seems like such a lovely simple idea I had to give it a go.

Grated cheddar


Pre-heat the oven to 200

Take a muffin tray and line each depression with a slice of bacon.

Beat the eggs,

Season with salt, pepper and mixed herbs.

Pour the egg mix evenly into each bacon lining. 

Grate some cheddar over the top and bake in the oven for 10-15 minutes until the egg is cooked and firmish to the touch.

These are delicious little bite-sized bacon and egg treats – perfect for breakfast or brunch. For a first attempt they went quite well but I think, next time, I’d use a different cut of bacon. I used back bacon slices and they were a little too large for the muffin depressions.
