I fancied a little bit of a stir fry on Thursday evening and so decided on a simple beef noodle recipe. It’s quick, easy and tasty. The beef and the oyster sauce compliment each other beautifully.
½ a tablespoon of toasted sesame oil
½ a tablespoon of groundnut oil
300g of beef steak (I used ribeye), cut into thin strips.
4 spring onions, finely chopped
½ a red onion, cut into wedges
½ a red pepper, sliced into thick strips
4 asparagus spears, broken into 2” pieces
A handful of mangetout
A handful of tenderstem broccoli heads
A nest of medium egg noodles
2 tablespoons of oyster sauce
1 tablespoon of light soy sauce
1 tablespoon of mirrin
Sesame seeds for sprinkling
Heat the two oils in a wok, over a medium heat.
Add the spring onion and crushed garlic and stir fry for a minute or so until coloured. Pop in the beef and quickly stir-fry until browned all over.
Remove the beef from the wok and set aside.
Add the red onion wedges, asparagus spears and broccoli. Add the oyster sauce, soy sauce and mirrin and stir well to combine.
Heat until lightly bubbling and then turn the heat down and simmer for 3-4 minutes. Then add the red pepper strips and mangetout and cook for a further two minutes.
Whilst the veg is cooking cook the noodle nest in boiling water until al dente, drain , rinse and refresh under cold water.
Return the beef to the wok and stir in.
Add the noodles to the wok and use a pair of long spoons or tongs to mix in well.
Serve, sprinkled with sesame seeds.
Very tasty – a rich, flavoursome stir-fry with a meaty beef flavour and the sweet oyster sauce.
