Mini raspberry pavlova

I’ve been making these quite a lot recently as they’re delicious, summery and really easy to make. They’re so obvious it almost feels like a cheat putting them up here.

Makes 3 or 4 (depending upon how much cream you like!)

1 meringue nest per person
150ml double cream
5-6 drops of Madagascan Vanilla essence
Extra meringue

Add the vanilla essence to the cream and whip, using an electric whisk, until thickened.

Divide the cream between the meringue nests.

Decorate with raspberries and pieces of broken meringue.
